Default Speed?

I was wondering, how big is the effect of speed of a weapon? o_O

such as... will a Short Sword (Fast) have a bigger chance of hitting a mimic when you open it then a Bastard Sword (Slow)

I believe that speed effects how fast the weapon hits it's combo...
And how fast your character begins his/her attack.

And, yes. The mimic example you mentioned is correct.

Weapon speed plays an important role. Specifically speaking you want a weapon that is atleast as fast as your opponent. I've seen a lot of people I fight wolves around brandishing daggers after I use mine. Keeping up where you can't win by over-powering keeps you from being stagger locked when something fast decides to do nothing but rush and combo. Try that with a 2 hander and you'll be chewed to bits.

It's either lagg or my daggers hits are a tinsy bit faster than a 2H, I get hit by a 2H more that I hit with a dagger/Fast weapon.

Another option is to set a cheap bow to your secondary and take a snipe at the mimic from across the room, then quickly change sets and fight.

I haven't seen any difference between using my 2h or a dagger. They both push back after a certain amount of hits, so to me it doesn't matter how fast they are.

I've tried fighting with dagger in such a way that when the enemy runs to you after you pushed it back, you can attack it again for two hits without using any skills. Just timing it perfectly right. I haven't found any pattern though. Seems quite random. I got hit PLENTY of times trying to do that.

Just hitting, running away and then suddenly attacking. Of course, I tried it on goblins, might be different if it was a much slower monster?
